For those who wish to experience Jerusalem through its street food, Hasabichiya on Shamai Street is a great option. Sabich is a traditional Iraqi food that consists of hard-boiled egg, eggplant and salad in a pita.
Yigal, the warm owner, is a true professional, making sabich at an industrial rate while working alone behind the counter. His unique technique is called "the layers method" and involves spreading hummus, adding a slice of fried eggplant, egg and salad, then more eggplant, half an egg, tehina, more salad, more hummus, more tehina, and finally some parsley to wrap it all up. Perfect.
Hasabichiya is closed on Fridays.
