Yigal, the warm owner, is a true professional, making sabich at an industrial rate while working alone behind the counter. His unique technique is called "the layers method" and involves spreading hummus, adding a slice of fried eggplant, egg and salad, then more eggplant, half an egg, tehina, more salad, more hummus, more tehina, and finally some parsley to wrap it all up.
