Basson’s passion for biblical culture drove him to research recipes that had been neglected and nearly forgotten for centuries, and then to go on to re-invent them. Every dish has its origins in biblical scenes such as Jacob and Esau’s lentil stew and all the spices and herbs used are grown in the surrounding hills of Jerusalem and Judea. The seven species feature heavily as well as other traditional ingredients.
The Eucalyptus is set in an ancient stone building with a huge scenic balcony, where one can enjoy the crimson sunset as it hits the walls of the Old City every evening. The combination of cuisine, passion and location make this restaurant a special place to experience Jerusalem’s heritage.
